  • 4 boneless, skinless chicken breasts
  • 1 red bell pepper, seeded and sliced
  • 1 yellow bell pepper, seeded and sliced

  • 1 zucchini, sliced
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions:

  1. Preheat oven to 400°F.
  2. In a large bowl, whisk together the olive oil, garlic, oregano, salt, and pepper.
  3. Add the chicken breasts, bell peppers, onion, and zucchini to the bowl and toss to coat in the dressing.
  4. Spread the vegetables in a single layer on a baking sheet and roast for 20-25 minutes, until tender and lightly browned.
  5. Meanwhile, preheat a grill or grill pan to medium-high heat.
  6. Grill the chicken for 6-7 minutes per side, until cooked through.

Coconut Panna Cotta with Mango Sauce

Ingredients:

  • 2 cups coconut cream

  • 2 tsp powdered gelatin
  • 1/4 cup water
  • 1 large ripe mango, peeled and pitted
  • 2 tbsp honey
  • 1/2 tsp vanilla extract

Instructions:

  1. In a medium saucepan, heat the coconut cream and sugar over medium heat.
  2. Whisk until the sugar has dissolved and the mixture is smooth.
  3. Meanwhile, in a small bowl, whisk together the gelatin and water until the gelatin is dissolved.
  4. Add the gelatin mixture to the coconut cream mixture and whisk to combine.
  5. Remove from heat and pour the mixture into 4 individual ramekins or glasses.
  6. Refrigerate for at least 2 hours, until set.
  7. Meanwhile, in a blender, puree the mango, honey, and vanilla extract until smooth.
  8. Refrigerate the mango sauce until ready to serve.
  9. To serve, run a knife around the edge of each ramekin and invert onto a plate.
  10. Drizzle with mango sauce.
