healthy eating for spring
Spring is here, and that means it's time to start thinking about refreshing and renewing our diets! As a community, we have a long and complex history with food, and it's important for us to remember that our cultural traditions are intertwined with what we eat. With that in mind, here are some delicious and healthy recipes featuring seasonal ingredients that will help us start the spring off right!
Spring Cleanse Salad
Ingredients:
- 1 bunch of asparagus, trimmed and sliced
- 1 bunch of radishes, sliced
- 1 bunch of fresh spring peas, shelled
- 1 small head of cauliflower, chopped into florets
- 1 avocado, sliced
- 2 tablespoons of chopped fresh mint
- 1 tablespoon of chopped fresh basil
- Juice of 1 lemon
- 3 tablespoons of olive oil
- Salt and pepper to taste
Instructions:
- Bring a pot of salted water to a boil. Add the asparagus and blanch for 1-2 minutes, until bright green and just tender. Remove with a slotted spoon and place in a bowl of ice water to stop cooking. Drain and set aside.
- In a large bowl, combine the asparagus, radishes, fresh peas, and cauliflower.
- In a small bowl, whisk together the lemon juice, olive oil, mint, and basil. Season with salt and pepper to taste.
- Toss the vegetables with the dressing until coated. Divide into bowls and top with sliced avocado.
Springtime Quiche
Ingredients:
- 1 store-bought pie crust
- 1 tablespoon olive oil
- 1 small onion, diced
- 1 bunch of asparagus, trimmed and sliced
- 1 bunch of fresh spring peas, shelled
- 1 cup of milk
- 4 eggs
- 1/2 cup of grated Gruyere cheese
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F.
- Roll out the pie crust and place it in a 9-inch pie pan.
- In a sauté pan, heat the olive oil over medium heat. Add the onion and cook until softened, about 3-5 minutes.
- Add the asparagus and peas and cook until just tender, about 3-5 minutes more.
- In a separate bowl, whisk together the milk, eggs, and cheese. Season with salt and pepper to taste.
- Pour the vegetable mixture into the prepared pie crust. Pour the egg mixture over the vegetables.
- Bake for 30-35 minutes, until the quiche is set and golden brown.
Spring Detox Smoothie
Ingredients:
- 1 banana, frozen
- 1 cup of chopped fresh pineapple
- 1 cup of fresh spinach
- 1/2 cup of coconut water
- 1/2 inch piece of fresh ginger, peeled and grated
- 1 tablespoon of honey (optional)
Instructions:
- Combine all of the ingredients in a blender.
- Blend until smooth.
- Pour into glasses and enjoy immediately.
Spring Vegetable Stir-Fry
Ingredients:
- 1 tablespoon of vegetable oil
- 1 small onion, diced
- 1 bell pepper, diced
- 1 bunch of asparagus, trimmed and sliced
- 1 bunch of fresh spring peas, shelled
- 1/4 cup of soy sauce
- 1/4 cup of vegetable broth
- 1 tablespoon of cornstarch
Instructions:
- In a large wok or sauté pan, heat the vegetable oil over medium-high heat.
- Add the onion and bell pepper and sauté until softened, about 5-7 minutes.
- Add the asparagus and peas and stir-fry for another 3-5 minutes, until just tender.
- In a small bowl, whisk together the soy sauce, vegetable broth, and cornstarch.
- Pour the sauce over the vegetables and stir-fry until the sauce has thickened and the vegetables are coated.
- Serve over rice or noodles if desired.
