Menu 1: Pasta with Creamy Avocado Sauce

Ingredients:

  • 2 ripe avocados, seeded and peeled
  • 1/2 cup fresh basil leaves
  • 2 garlic cloves, peeled and minced
  • 1 lemon, juiced and zested
  • 1/4 cup olive oil
  • 1/4 cup nonfat Greek yogurt
  • Salt and pepper, to taste
  • 1 pound spaghetti, cooked and drained

Instructions:

  1. In a blender or food processor, combine the avocados, basil, garlic, lemon juice and zest, olive oil, and Greek yogurt. Blend until smooth, scraping down the sides as needed.
  2. Add salt and pepper to taste.
  3. Toss the cooked pasta with the sauce until well coated.
  4. Serve immediately.

Menu 2: Grilled Steak with Chimichurri Sauce

Ingredients:

  • 1 pound flank steak
  • 1 cup parsley leaves, chopped
  • 1/2 cup cilantro leaves, chopped
  • 3 garlic cloves, peeled and minced
  • 2 limes, juiced and zested
  • 1/4 cup olive oil
  • Pinch of red pepper flakes
  • Salt and pepper, to taste

Instructions:

  1. Season the steak with salt and pepper.
  2. Heat a grill or grill pan over medium-high heat. Grill the steak for 5-7 minutes per side, or until desired doneness is reached.
  3. For the chimichurri sauce, combine the parsley, cilantro, garlic, lime juice and zest, olive oil, red pepper flakes, salt, and pepper in a blender or food processor. Blend until smooth, scraping down the sides as needed.
  4. Serve the steak with the chimichurri sauce spooned over the top.
