Meal prepping and freezer meals have become incredibly popular in recent years, not only are they a great way to save time but they also help to reduce food waste and can even save you money.

Vegetarian Freezer Meal #1
First up we have this delicious vegetarian lasagna! Perfect for a comforting, hearty meal when you don't have time to cook from scratch. Here's what you'll need:
- Lasagna sheets
- Salt and pepper
- 1 onion
- 2 cloves of garlic
- 2 bell peppers
- 1 jar of tomato sauce
- 1 cup of grated cheese
- 1 handful of fresh basil
To prepare, cook the lasagna sheets according to the package instructions. Meanwhile, fry the onion and garlic until soft and then add the chopped bell peppers. Pour in the tomato sauce and simmer for 5 minutes. In an ovenproof dish, layer the lasagna sheets with the tomato sauce mix and grated cheese. Top with fresh basil leaves and bake in the oven for 20-25 minutes. Once cooked, allow to cool before freezing in individual portions.

- 1 onion, chopped

- 1 zucchini, chopped
- 1 red pepper, chopped

- 1/2 cup of vegetable stock
- 4-6 potatoes, peeled and chopped
- 1/4 cup of almond milk
- Salt and pepper
To prepare, fry the onion and garlic in a pan until softened. Add the chopped vegetables and cook for a further 5-10 minutes. Add the lentils, tomato paste and vegetable stock and stir to combine. Simmer for 10-15 minutes until the sauce has thickened. Meanwhile, cook the potatoes in a pot of boiling water until softened. Drain and then mash with the almond milk, salt and pepper. To assemble the shepherd's pies, divide the lentil mix between individual ovenproof dishes and top with the mashed potato. Freeze once cooled.

- 1 can of chickpeas, drained and rinsed
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- Salt and pepper
To prepare, fry the onion and garlic until soft. Add the sweet potatoes, cumin and coriander and continue to stir for a further minute. Add the quinoa, chickpeas, kale and enough water to cover the vegetables. Bring to a boil and then reduce to a simmer for 20-25 minutes or until the sweet potatoes and quinoa are cooked. Season to taste and allow to cool before dividing into individual portions ready for freezing.

Finally, I want to share this delicious vegan chickpea and vegetable tagine recipe. Here's what you'll need:
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 red pepper, chopped
- 1 zucchini, chopped
- 1 can of chickpeas, drained and rinsed
- 1 can of chopped tomatoes
- 1 tablespoon of tomato paste
- 1 teaspoon of cumin
- 1 teaspoon of coriander
- 1/2 teaspoon of smoked paprika
- 1 handful of fresh coriander, chopped
- Salt and pepper
To prepare, fry the onion and garlic until softened. Add the chopped vegetables and continue to fry for a further 5-10 minutes. Add the chickpeas, canned tomatoes, tomato paste and spices. Mix well and simmer for 10-15 minutes until the sauce has thickened. Finally, add the chopped fresh coriander and season to taste. Once cooled, freeze in individual portions.
