Spring Soup Recipes

Recipe 1:

Ingredients:

  • 1 lb. boneless, skinless chicken breast or thighs
  • 4 cups of chicken broth
  • 10 oz. can of diced tomatoes with green chili
  • 1 tbsp. chili powder
  • 1 tsp. ground cumin
  • 1 tsp. garlic powder
  • 1 tsp. onion powder
  • 1/2 tsp. smoked paprika
  • 1/2 tsp. dried oregano
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1 can of black beans (rinsed and drained)
  • 1 can of corn (drained)
  • 1 lime, juiced
  • Cilantro, optional (to garnish)

Instructions:

  1. Place chicken in the bottom of your crockpot and add broth, tomatoes, and all of the spices.
  2. Cover and cook on low for 6-7 hours or on high for 3-4 hours.
  3. Remove chicken and shred with two forks, then add back to the soup along with drained black beans, corn, and lime juice.
  4. Give everything a good stir, let cook on low for another 20-30 minutes to let the flavors meld together.
  5. Ladle soup into bowls and garnish with cilantro, if desired.

Spring chicken tortilla soup

Recipe 2:

Ingredients:

  • 1 butternut squash, peeled and cubed
  • 1 sweet potato, peeled and cubed
  • 4 cups of vegetable broth
  • 1 onion, chopped
  • 1 tbsp. curry powder
  • 1 tsp. garlic powder
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/4 cup of heavy cream (optional)
  • 1/4 cup of chopped cilantro (optional)
  • Chopped almonds or croutons, optional for garnish

Instructions:

  1. Combine all ingredients in your crockpot, except heavy cream and cilantro.
  2. Cook on low for 6-7 hours or on high for 3-4 hours, or until vegetables are tender.
  3. Puree soup using an immersion blender or in batches in a blender.
  4. Stir in heavy cream, if using, and let cook for another 5-10 minutes on low.
  5. Ladle soup into bowls and garnish with chopped cilantro and almonds or croutons, if desired.

  • 1 lb. beef stew meat, cut into cubes

Instructions:

  1. In a separate bowl, whisk together flour and water to create a slurry, then pour into the crockpot.
  2. Stir in beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, salt, and black pepper.
  3. Add beef, carrots, potatoes, onion, and garlic, then stir to combine.
  4. Cover and cook on low for 8 hours or on high for 4 hours, or until beef is tender.
  5. Ladle soup into bowls and garnish with chopped green onions or chives.

Recipe 2:

Ingredients:

  • 2 lbs. boneless, skinless chicken thighs
  • 2 cups of chicken broth
  • 1 onion, chopped
  • 1 tbsp. minced garlic
