Welcome to my Lite n' Easy food review! As someone who is always on the go and doesn't have much time to prepare meals, I was interested in trying out the Lite n' Easy meal delivery service. This program claims to provide healthy and delicious meals that are already prepared and delivered right to your door. I decided to do some research and try it out for myself, so here is my experience with Lite n' Easy!

Week 3 Menu
The first thing I wanted to look at was the week 3 menu, which included dishes such as Chicken and Mushroom Risotto, Beef and Mushroom Casserole, and Thai Green Chicken Curry. Each dish came with a photo and a detailed description of the ingredients and nutritional information. I was impressed by the variety of options and the fact that each meal had a good balance of protein, carbs, and veggies. It seemed like there was something for everyone, whether you were a meat lover or a vegetarian.
I decided to try the Chicken and Mushroom Risotto first, and I was not disappointed. The portion size was perfect, and the flavor was delicious. I also appreciated that the dish was low in calories and had a good amount of protein. The Thai Green Chicken Curry was another favorite of mine, with just the right amount of spice and a generous serving of veggies.
Chicken and Mushroom Risotto
Ingredients:
- 2 cups of chicken broth
- 1 tablespoon of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 cup of Arborio rice
- 1/2 cup of white wine
- 1 cup of sliced mushrooms
- 1/2 pound of cooked chicken breast, diced
- 1 tablespoon of chopped fresh parsley
- Salt and pepper to taste
Instructions:
- Heat the chicken broth in a saucepan and keep it warm on low heat.
- Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and cook until softened.
- Add the Arborio rice to the skillet and cook, stirring constantly, until the rice is translucent.
- Add the white wine to the skillet and stir until it is absorbed.
- Add the mushrooms and chicken to the skillet and stir until heated through.
- Add the warm chicken broth to the skillet, about 1/2 cup at a time, stirring constantly until the liquid is absorbed before adding more broth.
- Continue adding the chicken broth and stirring until the risotto is creamy and the rice is tender.
- Stir in the parsley and season with salt and pepper to taste.
DIY Barb's Lite n' Easy Meals
If you prefer to cook your own meals, Lite n' Easy also offers a variety of recipes on their website. I decided to try out one of the recipes called "Chicken and Vegetable Stir Fry" from the DIY Barb's Lite n' Easy Meals section. The ingredients were easy to find and the recipe was simple to follow. The stir fry turned out to be a hit with my family!
Chicken and Vegetable Stir Fry
Ingredients:
- 2 tablespoons of vegetable oil
- 1 pound of boneless, skinless chicken breast, sliced
- 1 large carrot, sliced
- 1 red bell pepper, sliced
- 1 small onion, sliced
- 2 garlic cloves, minced
- 1 tablespoon of cornstarch
- 1/4 cup of soy sauce
- 1/4 cup of water
- 1 teaspoon of sesame oil
- 1/4 teaspoon of ground ginger
- 1/4 teaspoon of red pepper flakes
- 2 cups of cooked rice
Instructions:
- Heat the vegetable oil in a large skillet over high heat. Add the chicken and stir-fry until cooked through.
- Add the carrot, bell pepper, onion, and garlic to the skillet and stir-fry for 2-3 minutes, until the veggies are tender-crisp.
- In a small bowl, whisk together the cornstarch, soy sauce, water, sesame oil, ginger, and red pepper flakes.
- Pour the soy sauce mixture into the skillet and stir until the sauce thickens and coats the chicken and veggies.
- Serve the stir fry over cooked rice.
Prepared Meals Review
After trying out some of the recipes, I decided to order some prepared meals from Lite n' Easy. The process was very easy, as all I had to do was choose my meals online and they were delivered straight to my doorstep. The meals were packaged in plastic containers and were clearly labeled with the name of the dish and the nutritional information.
I ordered a variety of dishes, including Chicken Fajitas, Spaghetti Bolognese, and Lamb Kofta. The meals were all very flavorful and had a good balance of protein, carbs, and veggies. I also appreciated that the portion sizes were generous without being too large. Overall, I was very impressed with the quality of the prepared meals and would definitely order them again.
A Week of Eating Lite n' Easy
For a full week, I decided to eat only Lite n' Easy meals to see how well I could sustain myself on this program. I found that the meals were filling and satisfying, and I didn't feel hungry between meals. I also appreciated the convenience of not having to grocery shop or cook for myself.
