  • 1 tsp of lemon zest

  1. In a medium saucepan, heat up the vegetable broth and keep it warm on low heat
  2. Heat up the olive oil in a large skillet over medium heat
  3. Add the onion and garlic and sauté for 2-3 minutes, until softened
  4. Add the Arborio rice and stir for 2-3 minutes, until coated with oil and slightly toasted
  5. Add the white wine and stir until absorbed
  6. Add a ladleful of broth to the rice and stir until absorbed
  7. Continue adding ladlefuls of broth to the rice, stirring constantly, until the rice is cooked through and has a creamy consistency (this should take about 20-25 minutes)
  8. Stir in the lemon zest, asparagus, and Parmesan cheese
  9. Season with salt and pepper, to taste

Springtime Picnic Pasta Salad

Pasta salad is a classic picnic dish, but you can make it extra special by using fresh spring veggies and a light vinaigrette dressing.

Ingredients

  • 8 oz of fusilli pasta, cooked according to package instructions
  • 1/2 pint of cherry tomatoes, halved

  • 1/4 cup of olive oil

  3. Cover the bowl and refrigerate for at least 1 hour before serving
